Gluten Free Caramelized Onion & Rosemary Focaccia

For the Focaccia:

1 package A Tavola Togethe Gluten Free Focaccia Mix – Original or Rosemary

1 1/4 cups club soda or sparkling water

1/3 cup olive oil

1 9x12-inch baking pan

For the Topping:

1/2 small onion, peeled and chopped fine

1 clove garlic, minced

3-4 small sprigs fresh rosemary

2 tablespoons olive oil


Prepare the Focaccia:

Prepare focaccia dough following package directions with mix and club soda.

Preheat oven to 450°F.

Pour olive oil into baking pan. Spread dough into pan. Allow to rise 20 minutes. Bake as package directs.

While focaccia is baking, saute’ onion, garlic and fresh rosemary in olive oil for just a few minutes.

After focaccia has baked for 10 minutes, spread cooked onions and rosemary on top and bake 5 to 10 minutes longer or until light brown. Allow to cool before serving.
