Gluten Free Honey Cornbread

1/2 cup corn meal, fine grind

1/2 cup At the Table Together Gluten Free Focaccia Mix

1 teaspoon baking powder

1/2 cup Extra Virgin Olive Oil, mild in taste

1/4 cup milk

1/4 cup honey

1 large egg


Preheat oven to 350° F and grease 8 x 8-inch baking pan or 8 muffin cups with baking spray.

Combine corn meal, Gluten Free Focaccia Mix and baking powder. Set aside.

Beat olive oil, milk, honey and egg in a medium bowl for 30 seconds.

Stir in dry ingredients and mix just until the batter is evenly incorporated. Do not overmix!

Pour batter into prepared pan or divide evenly among muffin cups.

Bake for 15 to 20 minutes or until a knife inserted in the middle comes out with moist crumbs.

Remove from oven and let cool on a wire rack.
