Gluten Free Banana Muffins

Ingredients

1/4 cup extra virgin olive oil

1/4 cup canola oil

1/4 cup honey

1/4 cup brown sugar

1/2 cup sugar

2 large eggs

2 very ripe bananas

1 tablespoon pure vanilla extract

1/5 cup almond meal

1 1/2 cups A Tavola Together Gluten Free Focaccia Mix

1 teaspoon baking powder

1 teaspoon cinnamon

1/8 teaspoon nutmeg

1/2 cup chocolate chips, optional but delicious

2 teaspoons cinnamon sugar

Directions

Preheat oven to 350° F. Grease 12 muffin cups with a little olive oil or baking spray.

Beat oils, honey, sugars, bananas and vanilla until well incorporated.

Combine almond meal, Gluten Free Focaccia Mix, baking powder, cinnamon and nutmeg. Set aside.

Stir dry ingredients into batter. Do not overmix! Stir in chocolate chips, optional.

Divide batter evenly among muffin cups. Sprinkle with cinnamon sugar or streusel topping.

Bake for 15 to 20 minutes or until a knife inserted in the middle comes out with moist crumbs.

Remove from oven and let cool on a wire rack.

Substitute 24 large pitted and chopped fresh cherries for the banana!
