1cup sparkling water or club soda, chilled Vegetables and/or shrimp Extra Virgin Olive Oil for frying
Clean and slice vegetables. Clean shrimp, leaving the tail on.
In a medium bowl, mix Gluten Free Focaccia Mix with egg and sparkling water. Beat with wire whisk until there are no lumps.
Heat olive oil in a medium skillet or in an electric wok or fryer.
Working in small batches, dip vegetables or shrimp into batter. Using chopsticks or tongs carefully place into hot oil. Cook on each side for about 2 minutes or until golden. Transfer to a paper towel-lined plate to drain. Repeat.
Serve with your favorite dipping sauces and condiments rack.
