2 tablespoons extra virgin olive oil
1/2 cup butter
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup gluten free oats
1 cup A Tavola Together Gluten Free Focaccia Mix
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon cinnamon
2 cups raisins, cranberries or chocolate chips
Preheat oven to 350° F. Line cookie sheet with silpat silicone mat or parchment paper.
Beat oil and butter with honey and sugars, until well incorporated. Add vanilla and egg and beat well.
Combine oats, Gluten Free Focaccia Mix, baking soda, cream of tartar and cinnamon.
Stir dry ingredients into batter. Stir in raisins, cranberries, chocolate chips or an assortment of all three.
Drop rounds of dough using an ice cream scoop on baking sheet.
Bake for 7 minutes then rotate trays and bake 7 minutes more or until light brown.
Remove from oven and let cool on a wire rack.
Raisins, Cranberries or Chocolate Chips all taste great in these soft cookies!
